CARAMELIZED ONION & BACON FRITTATA
1 medium Vidalia onion, sliced thin
10 slices thick bacon
3 tablespoons brown sugar
1 tablespoons cider or balsamic vinegar
8 eggs
1/4 cup milk
3 tablespoons butter
1/2 cup grated Gruyere cheese
salt and pepper to taste
CARAMELIZED ONION & BACON FRITTATA
1 medium Vidalia onion, sliced thin
10 slices thick bacon
3 tablespoons brown sugar
1 tablespoons cider or balsamic vinegar
8 eggs
1/4 cup milk
3 tablespoons butter
1/2 cup grated Gruyere cheese
salt and pepper to taste
- Preheat oven to 400 degrees.
- Whisk together the brown sugar and vinegar.
- Toss onions and bacon slices in the mixture, packing it onto the slices.
- Layer bacon and onions on grilling rack.
- Bake 15-20 minutes or until crisp.
- Increase oven to broil.
- In a medium* cast iron skillet, heat the butter. Make sure to coat the sides also with the butter.
- Whisk the eggs, milk and salt and pepper together.
- When the butter foams, pour in the egg mixture and cook, stirring until eggs begin to scramble and are still quite moist.
- Top with the onions, bacon and cheese.
- Broil about 2 minutes until the cheese is melted and the eggs are done.
- Slice and serve.

Good morning to all and thank you Tamy for the weekly wrap up and yummy recipe!
Not much "GIT" going on here yet today. Since it's a 3 day weekend things are a bit more relaxed than usual. I'm going to make a nice brunch for the family and then GIT started on some catch up cleaning, laundry, decluttering this afternoon. I'll check back when I GIT started :-)
Relaxed here too! I've emptied the dishwasher, done 2 loads of laundry and am putting together a grocery list, but probably won't get much else accomplished on this lazy Saturday other than some recipe organizing.
Going to have impromptu date night with Mr S, and took J to our community's pool for the first time today. Lots of holiday deals going on this weekend, so lots of frugal roundup work to do yet.
This recipe looks like a good one for brunch!
Well, I guess I lied, still haven't got started with much of anything for the GIT challenge today and don't know if I will. I'm enjoying not doing much of anything today.

I'll be doing a bit of GIT today as I work on Sunday and Monday, so no three day weekend for me... We've showered, breakfasted and lectured the boys a bit... the pets are fed... hubby and son2 are off to redeem the bottles and cans... I'm starting in the kitchen, then to the boys bathroom and then maybe outside... hubby still has roses to plant... we were going to see Shrek today but decided to hold off on any playing til the boys are officially out of school for the summer....

the dishes are done, every tile in the island has been scrubbed, floor swept, rugs washed, boys bathroom cleaned and floor washed... son2 washed both cars and son3 helped him wash Danny the dog... hubby planted the roses and repaired sprinklers... and we discussed how we want to design the last section of the backyard patio... I trimmed the roses and swept the back porch and took some pictures... now the meatballs are simmering for the pasta... potatoes are waiting to be peeled for Monday's potato salad... I think I deserve a treat of a few chips with salsa... since it is a holiday weekend...

Hey Linda, Sounds like a productive day over there! I cleaned the kitchen, did two loads of laundry, made brunch earlier and I also made a spaghetti dinner for tonight. That's all I accomplished for today, but that's ok considering it is a 3 day weekend for me. Sorry to hear you have to work tomorrow and Monday.
